I’m slowly trying to transition the processed sugar out of our house. I’m working overtime trying to keep it a secret. My 6 year old loves to cook so I told her I needed help with a new cookie recipe. See what I did there?! She jumped at the opportunity just as planned.
These were super simple, easy to throw together and the base recipe only calls for two ingredients: bananas and oats. You can add in anything you want to from there. We addedpeanut butter, honey and cinnamon. You could add raisins, mini chocolate chips, dried fruit…anything your kids like!
2 ingredient breakfast cookies
Preheat oven to 350°F.
Mix 2 bananas with 1 cup of oats.
Once combined, mix in any add ins. *These will not be sweet unless you add honey, sugar or maple syrup. I added honey and I am slowly going to remove it. We added 2 teaspoons of cinnamon, 2 tablespoons of peanut butter, 2 and tablespoons of honey.
Once combined scoop out tablespoon size balls and bake on parchment paper lined pan for 15 minutes. Let cool fully before eating.
If you want to make them more of a sweet cookie you can ice them with a little royal frosting.
Here is the royal icing recipe I use, I halve this and it still makes a LOT of frosting! This can be stored in an airtight container for up to 12 months. (I had some left over from our Christmas cookies!)
